Weight Watchers Chocolate Chip Cookie

So here we are just about a week into the new year.  I'm not ready to abandon my diet (give me a few weeks), and I'm still on a sugar high from the holidays.  So what's a Mom to do when her 4 year old looks up with her big blue eyes and says, "Mom, can we bake cookies today?"   **I should note that I don't have enough willpower to make cookies and not eat ANY!


Why, bake the low-cal version of course!  These are actually pretty darn good, and they only have 1 Weight Watchers Point...on the old program at least.  Not sure how many calories, but one will satisfy the dieters sweet tooth.  






Ingredients
2 T. butter, softened
2 T. canola oil
1/2 c. dark brown sugar
1 t. vanilla extract
1/8 t. salt
1 large egg white
3/4 c. flour
1/4 t. baking soda
1/2 c. mini chocolate chips

1.  Preheat oven to 375.
2.  Cream together butter, oil and brown sugar.  Add vanilla, salt and egg white and mix together thoroughly.
3.  Mix together flour and baking soda.  Add chocolate chips and stir to distribute evenly.
4.  Drop rounded teaspoons of dough onto non-stick baking sheet.  Bake cookies 4 to 6 minutes, then cool on a wire rack.
Makes 12 cookies

**I usually double the recipe.  My kids like these as well as regular chocolate chip cookies.

Oh, I could have used this recipe earlier in the week. I made a batch using the nestle recipe then ate too many of them. Can't wait to try this.

This is the only chocolate chip cookie recipe that we make at our house. My kids don't even know that it's Weight Watchers. The mini chocolate chips are the secret....chocolate in every bite.
